Description:
A white, crystalline powder, freely soluble in water, sparingly soluble in alcohol, insoluble in chloroform and in ether. It gradually darkens on exposure to light, is reasonably stable in air when dry, but rapidly oxidizes in solution in presence of air.

Applications:
Ascorbic acid, popularly known as Vitamin C or L-Ascorbic acid is utilized as an antioxidant, nutrient, and preservative. Commonly used in beverage, fruit products, flour products, dairy products, wine, bear, fish, meat binding, and pickling.
