Description:
Sodium benzoate is a white, odorless or nearly odorless pellet, pearl or crystalline powder. It is slightly hygroscopic. One g is soluble in 2 mL of water, in 75 mL of alcohol, and in 50 mL of 90% alcohol. An aqueous solution is slightly alkaline with a pH of about 8.

Applications:
Preservative and anti microbial agent for tomato products, pickles, sauces, fruits, fruit salads, jams, cider, fruit juices, salad dressing, and some meat and poultry products. Also used in margarine if combined with Sorbates.
