Description:
Citric Acid is available in anhydrous and monohydrate forms. It occurs as colorless crystals or white crystalline powder. It is odorless, has a strongly acidic taste. One gram is soluble in about 0.5 ml of water, in about 2 ml of alcohol, and in about 30 ml of ether. Citric Acid anhydrous melts at 153oC (307°F).

Applications:
Citrus flavoring in beverages and confectionery. pH adjuster in confectionery, beverages, fruits, vegetables, and dairy products. Anti-coagulant and preservative in meats. Sequestrant and dispersing agent. Class IV preservative in fats, oils, shortening and glycerides. Cleaning agent. Other uses: cosmetics, personal care, textile, and paper products.
