Description:
A white, free-flowing powder with a characteristic odor. It is slightly soluble in water. One gram dissolves in about 10ml of alcohol and in about 20 ml of ether.
Applications:
Used as preservative and mold inhibitor in baked goods, beverages/soft drinks, cheese, fish, fruit juices, fresh fruits and vegetables, tomato juice, margarine, pickled products, salad dressing, wine, sausage, sea food cocktail, and chocolate syrup.
Advantages:
Sorbic acid is highly effective against most micro-organisms as well as being simple and economical to use. Furthermore, sorbic acid does not affect the odour or flavour of the products in which it is used.
